Hand-forged Japanese chef's knife with a 23 cm blade from the Eden Susumi collection. Eden Kanso Susumi knives are thin and razor-sharp. The SG2 powder steel is stainless and, with a hardness of 62-63 HRC, rock-solid. Next to that the side of the steel is also considerably harder than is common for damascus steel. This means that the side of the knife is much better protected from scratches. 

## Nice SG2 steel blade

The blade of this knife is made from SG2 powder steel, hence the name. This is a type of steel with a very fine structure and a hardness of 62-63 HRC. Because of this hardness you can sharpen the Susumi knives extremely thin. The knives are corrosion resistant and the damascus steel has the same hardness as the SG2 core. The knives are more scratch-resistant than most knives made from damascus.

## Traditional red sandalwood handle

The handles are made from red sandalwood, a type of rosewood. Perfect for a Japanese knife such as this. The handle has a traditional Japanese D-shape. As such the knife feels comfortable in hand. Because of the asymmetric design, however, this knife is suited for right-handed use. 

## Sharpening Eden Susumi kitchen knives

Don't sharpen these knives in a pull-through sharpener! Because of the rock-solid steel and the sideways movements that occur in a pull-through sharpener pieces of the edge could break off. We therefore advise you to carefully sharpen by hand on a sharpening stone, sharpening steel or with a sharpening system.

Beautifully made knife edge flawless but just way too brittle or maybe I got faulty unit slightest tip caused tip to break plus chopping peppers chipped blade just not fit for purpose in European kitchen. 

Franchement je suis impressionner par le niveau de finition de ce couteau, les photos présenté ne lui rendent par forcément justice; le motif du damas est superbe, le couteau est extremement coupant (le test de la feuille est passé haut la main, forcément) et leger, il est dans un état quasiment parfait (sauf deux minuscules rayures, mais vraiment minuscule), le manche de style japonais classique offre une sensation de qualité et il est tres agreable en main. Je suis vraiment tres content, je regrette juste que Knivesandtool n'est pas ajouter d'autres couteaux, comme le couteau à pain, à cette magnifique gamme de couteaux, merci <3

Zeer tevreden. De mes ligt goed in je hand en best licht. Je moet wel voorzichtig zijn met sashimi snijden want het blad is best ruw waardoor de vis aan vast kleven.
