Kai Shun Premier Tim Mälzer Minamo: an artistic combination of Japanese and European kitchen knives
The Kai Minamo series is a 3-part extension of the Shun Premier series, developed in collaboration with German television chef Tim Mälzer. The collection consists of a utility knife, a paring knife and santoku. They feature a beautiful 32-layer damascus-steel blade and a handle made from black pakka wood with great details. The 3 Kai Shun Minamo knives all have similarly designed blades. These knives are a fusion between a typical Japanese santoku and a European chef's knife. The shape of the blade is striking. The square shape was specifically chosen to make it easy to scoop up your ingredients after cutting them. The core of the Kai Minamo kitchen knives is made from extremely hard VG-MAX steel with a hardness of 61-62 HRC. The core is wrapped in 32 layers of stainless damascus steel. The blade's finishing touch is the glossy finish. Each Minamo blade gets a special surface treatment, creating the stunning pattern of lines that is so characteristic of damascus steel. Each knife is sharpened by hand before it ends up in your kitchen. The shape of the blade and the stunning design make these knives stand out.

The handles are made of laminated, black pakka wood and at the end of the handle is a steel end cap sporting Tim Mälzer's logo. The symmetrical European shape of the handle is noticeable. It's different from handles in the Japanese design style.
